One of my favourite childhood desserts is Vanilla Panna Cotta.

In those hot summer days, there aren't many things better than opening the fridge and eat a cold, set, silky Vanilla cream.

It is like eating an Ice Cream that never melts! (or almost)

I used to have it at lunchtime as a kid during the summer holiday in a seaside town called Finale Ligure and the scent of Vanilla mixed with the saltiness in the air made a very interesting mix.

That is why now I sprinkle a few flakes of Malden Salt over it, to recreate that special feeling.

During the short period of Summer people try to make the most of it so, you should enjoy and relax and leave the catering to the experts.
